heat the oven to 180C cover a tray with greaseproof paper |

| 1 lemon |
grate the lemon rind squeeze the lemon juice |
| 115 g butter 200 g caster sugar |
cream the butter and sugar together |
| 1 tsp vanilla 1 egg |
mix in the vanilla and egg |
| 245 g plain flour 1/2 tsp baking soda |
mix the flour and baking soda add to the butter cream a little at a time mix in the lemon rind and juice put walnut size dollops on the baking tray about 8cm apart put in oven for 12 minutes |
