Lemon butter cookies

Serves 50

heat the oven to 180C
cover a tray with greaseproof paper
1 lemon
grate the lemon rind
squeeze the lemon juice
115 g butter
200 g caster sugar
cream the butter and sugar together
1 tsp vanilla
1 egg
mix in the vanilla and egg
245 g plain flour
1/2 tsp baking soda
mix the flour and baking soda
add to the butter cream a little at a time
mix in the lemon rind and juice
put walnut size dollops on the baking tray about 8cm apart
put in oven for 12 minutes
